MMF = Mobile Multimedia Format is the format Samsung used for its polyphonic ringtones, just like MID or WAV.
A true Samsung poly ringtone should support up to 16 instruments average around 6, depending on the song, whereas Nokia poly is just 4, which is why it sounds better.
But some just merely converting it just to support the MMF format but w/out making full use of the 16 poly capabilities.
Furthermore, you can actually convert a voice wav to mmf and upload to the phone which is pretty cool as I've tried that before. Just imagine having a ringtone which say "Hello" or "Pick up the phone" or maybe your gf/bf voice.
