Gino, please try reading the threads here in General Sequencing, or in Sequencing Software. Many have asked the same question. The answer is often Anvil Studio, though there are others out there as well.

You have only your ears, and if you're lucky, a guitar tab or someone else's MIDI file. It takes some musical knowledge to make the job easier, but I believe there are sequencers who don't read music and do a fine job. At my level of expertise (and pickiness), it takes me about 20-30 hours of work to make a good representation of a song. Some songs are easier (and shorter) and some are longer. Hope that helps. :)
